Ingredients (serves 2 people):

2 Pizzone Margherita

Small delicata or sweet dumpling squash

Bunch of fresh parsley (1cup roughly chopped)

Capers (1 tbsp)

1 garlic clove

Olive oil (8 tbsp)

Salt and pepper to season
Preparation:

Step 1: Wash the squash well, and leave the skin on. Slice it into 1/8-inch-thick slices and mix them with 1 spoon of olive oil and a small pinch of salt and pepper (you need around 16 small slices)

Step 2: Preheat the oven to 400ºF and bake squash slices for 7 minutes.

Step 3: Prepare salsa verde: Chop the parsley until finely minced and place in a small bowl, mince the capers and garlic and add to the parsley. Add olive oil and season with a pinch of salt and pepper, mix everything well.
(Tip: you can mince parsley, capers, and garlic in a food processor instead of chopping them by hand)

Step 4: Take the Pizzone tray out of the box. Remove the compostable film from the tray, and place squash slices on Pizzone. Preheat the oven to 400ºF. Bake Pizzone in the provided compostable tray or on a sheet pan for 8 to 10 minutes.
(If your Pizzone is frozen, bake it for an additional 10 minutes before adding squash slices.)

Step 5: When Pizzone is baked take it out from the oven and drizzle it with your salsa verde.
